Dish of the Week: Nashville hot chicken at One Eared Stag

Nashville hot chicken, arguably the defining dish of Music City, has become so ubiquitous on the Atlanta playlist that it’s almost tired. Enough already with the sweet-greasy sauce and the flavorless, pumped-up chicken.

Such was my sentiment until the recent Saturday I flew into One Eared Stag on a quest for biscuits and end up perching myself before a plate of Chef Robert Phalen’s magnificent bird.

Why did it make me want to squawk?

Laid out on a fat square of “white bread,” the chicken was piled with sweet-tangy bread-and-butters and a bold, roughly chopped sprinkle of Italian parsley: It was textbook crispy, tender to the bite.

But here’s the clincher: The sauce, hot enough to sting without incinerating, had settled into the aggressively buttered Texas toast, yielding an unctuous, melt-y bite of hot-chicken crouton, tart pickle and clean-tasting herb. It pricked my palate, then cooled it down like air-conditioning. Mind officially blown. Available for $9, it’s the hit hot-chicken sensation of the year!
